| The Food and Drug Administration (FDA) directs its efforts to ensure that safety and other public health issues are properly addressed as the products of the new biotechnology come to the market. Potential new substances considered in the safety assessment are proteins, carbohydrates and fats and oils because these are the substances that will be introduced or modified in the first plant varieties developed by genetic engineering. In general, substances that have a safe history of use in food and substances that are substantially similar to such substances would not require extensive premarket safety testing.
